Phoenix Oyster (Pleurotus pulmonarius) - Also known as Italian Oysters, this mushroom is a warm weather hardwood loving species that feature pale brown, fan-shaped caps that grow in clusters. They have a mild, slightly sweet flavor with hints of almond with a delicate chew. Phoenix mushrooms are great in stir-fries, soups, or as a seafood substitute. Much like their other oyster cousins, they are a fantastic source of B vitamins, niacin, antioxidants and lovastatin which may naturally lower cholesterol levels. They are also very high in ergothioneine.
Flavor: Delicate umami, sweet undertones, and faint earthy and almond flavors.
Texture: Soft, tender, with a slight chew when cooked.
Cooking: Best cooked lightly with golden browning on all sides. Absorbs flavors from sauces and broths well. Very versatile and do well in stir-fries, pasta, soups, and sautéed as a side dish or topping.
