Mushrooms do best when they can breathe. Leaving them in a paper bag on an open shelf in your refrigerator will ensure longest shelf life. Oyster mushrooms typically last 5 days before they start to brown and wilt on the edges. As long as your mushrooms aren't slimy and don't have an off smell, a little browning and drying won't affect their taste significantly. Lion's Mane, Chestnut, King (including Black Pearl) Oysters can last 7 days or more properly refrigerated.
You can also cook them in a dry pan on medium low heat to just cook them through, cool them and refrigerate before they go bad to extend shelf life a little longer. You can also freeze up to a couple months after this process as well.
Most mushrooms are amazingly adaptable to cooking methods. You can stirfry, sauté, grill, roast, braise, put them in soups or hot pots. Really, the sky is the limit.
If you treat them like meat, they'll come out like meat. If you add them to veggie dishes, they'll fit right in as well. Their skins brown nicely and even get crispy when fried or roasted hard enough. They can take a good amount of heat as well so try it all out.

There are very rare cases of mushroom allergies existing. Some people do have some digestion sensitivities because of the high levels of soluble and insoluble fiber along with polysaccharides that can sometimes over-activate your gut microbiome.
If you haven't eaten mushrooms regularly and experience digestive issues, try to narrow down which type of mushroom may have caused the issue. Sometimes it takes your gut and digestive system a few tries to adjust and some people report feeling better after getting over the first couple trials. Listen to your body!
