Pioppino (Agrocybe aegerita) hails from the hills of Italy and is known for its long stem and velvety brown cap. They have a nice nutty, earthy flavor and firm, meaty texture. They hold up well to cooking and can be braised, roasted, sautéed, adding to pasta, risotto, soups and stir-fries. It also works well with cream sauces with garlic and herbs.

Sauté/Pan-fry: Cook in butter or olive oil over medium-high heat, giving them space to brown. Add garlic, herbs, and a splash of wine or broth.
Roast/Grill: Toss with oil, salt, and pepper and roast until golden, or grill on skewers.
Braise/Stew: Their sturdy texture makes them great for slow-cooked dishes like stews and sauces.
Soups/Risotto: Excellent in creamy sauces or traditional Italian risotto.
